Learning Goal: I’m working on a management question and need guidance to help me learn.
As a result of an increasingly competitive market and fluctuations in guest service levels, restaurants who live off of tight profit margins have looked to industry models as guidance to manage the quality of product and service to sustain themselves.
Total Quality Management (TQM) is a continual improvement system and management philosophy. According to ASQ, “A core definition of TQM describes a management approach to long-term success through customer satisfaction. In a TQM effort, all members of an organization participate in improving processes, products, services, and the culture in which they work” (ASQ, n. d., para. 1).
Likewise, although not exactly the same, Continuous Quality Improvement (CQI) aims to also evaluate and improve quality. CQI has been defined as “a systematic approach to the measurement, evaluation and improvement of the quality of all products and services, through the use of disciplined inquiry and teamwork” ( Gift, 1992).
Whichever industry model of quality management is utilized, it is an important philosphy to implement as part of a restaurant operation.
